Legumes, pulses and rice
are the staples in any South Indian diet, and the dishes are
given their flavor from fresh herbs, spices and coconut. A
mixture of mustard seeds, curry leaves and dried red chillis,
which are heated in oil and added to the dish at the end,
complete the South Indian culinary experience.
Spices
are grown widely in Kerala, with Cochin being the home of
the Indian Spices Board. Many familiar spices, such as
pepper, ginger, vanilla, tumeric, clove, nutmeg, cinnamon
and cardamom grown abundantly in this area, and exported all
over the world.Kerala’s long
coastline and strong fishing industry has contributed to
many fish-based delicacies. |
